Carrot Cake Brownie
If you love cake and fancy a healthier alternative to processed and refined versions from the shops then this is absolutely for you. Tried and tested by Carrot Cake lovers, I'm certain this will become your favourite go to healthy sweet option. When I first created this delicious healthy sweet alternative it was in the form of a cupcake. However, I love the form of a brownie and the freedom to cut my square to my desired size! I'm sure you'll agree.
All my recipes are free from refined sugar. This Carrot Cake Brownie is also gluten and wheat free but you'll never know with it's soft and spongy texture.
CARROT CAKE BROWNIE RECIPE
- 2 cups (200g) ground almonds
- 4 medium eggs
- 1/2 cup (50g) grated raw carrots
- 1/4 cup (65ml) 100% maple syrup
- 1/2 cup (125ml) melted coconut oil
- 1 tbsp psyllium husk
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ground ginger
- Handful of crushed walnuts
- 1 cup (100g) mascarpone cheese
- 2 tsp vanilla extract
- 2 tbsp raw honey
WHAT YOU NEED TO DO:
STEP 1: Beat the eggs and mix in the coconut oil, maple syrup, and raw grated carrots and mix together.
STEP 2: Add in dry ingredients of ground almonds, baking powder, psyllium husk, cinnamon, ground ginger, crushed walnuts and mix together
STEP 3: Empty into a lined brownie tim and bake in a preheated oven at 180 degrees (fan assisted) for 18 minutes or until risen and golden.
STEP 4: In a separate bowl mix together the mascarpone cheese, vanilla, and honey. STEP 5: Once the brownie has cooled, top with the frosting and sprinkle with crushed walnuts. Store in an air tight container in the fridge.
