Cheeky Chicken Chasni

My Cheeky Chicken Chasni will give the real deal a run for it's money. It's mild and creamy, with the deliciously distinct sweet and sour flavour running through it. A firm family favourite. It's made from nutrient dense ingredients such as turmeric, apple cider vinegar, and the sweet and stickiness comes from raw honey. If you like it spicy you can simply add in some chilli powder. It is absolutely delicious and you will be so surprised at how simple it is to make that and how light you feel after eating it you will wonder why you ever bothered to call it in.
CHEEKY CHICKEN CHASNI - serves 2
- 300g of raw chicken (diced up) - Veggies (I use 1 medium onion and 1/2 red & 1/2 yellow pepper) - 1 cup (250ml) passata or chopped tomatoes - 2 tbsp mascarpone cheese (if dairy free substitute with 2tbsp coconut cream)
- 3 tbsp raw honey
- 3 tbsp apple cider vinegar
- 2 tsp turmeric - Handful of coriander
Store Cupboard Staples: - Salt - Pepper - 1 tsp coconut oil
What you need to do: Step 1: Gently fry the veggies in coconut oil for 2 minutes Step 2: Add in the raw chicken, sprinkle over the turmeric, mix well and brown for a few minutes until chicken is half cooked Step 3: Add in passata, apple cider vinegar, mascarpone cheese, raw honey, salt and pepper and mix together really well Step 4: Simmer gently for roughly 5 minutes (or until chicken is cooked right the way through) Step 5: Serve with pilau rice and garnish with coriander. Enjoy!
Top Tip: Mix in 1/4 tsp of turmeric and some ground black pepper just before putting your rice on to boil. The turmeric will create a lovely golden colour to your rice.
